Ingredients:
1/4 cup butter or margarine
5 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon prepared mustard
1/4 teaspoon onion seasoning
1 cup milk
2 cups flaked cooked or canned fish
flour
1 egg, beaten with 1 tablespoon water
fine dry bread crumbs
Directions:
Melt butter or shortening, add flour and seasonings and blend. add milk and cook and stir until the resulting
sauce is smooth and thickened. Add fish and blend. Spread the mixture into an 8-inch-square pan and chill. Cut
with a biscuit cutter into rounds, dredge with flour, dip in egg, then in dry crumbs. Fry in hot fat 1 1/2 inches
deep preheated to 375 degrees F. for 2 or 3 minutes, or until the crumbs are golden brown. Drain on unglazed
paper and serve at once. To fry in shallow fat, melt 1/2 cup of fat in a heavy skillet and fry on both sides
until golden brown.
