Fish Loaf

Ingredients:

2 cups soft bread crumbs
1/2 teaspoon onion seasoning
1/4 teaspoon celery salt
1 tablespoon finely minced parsley, if desired
1 tablespoon lemon juice
1/2 teaspoon salt
dash of pepper
2 eggs, beaten
1 cup milk
1 pound (2 1/2 cups) flaked cooked or canned fish (salmon, tuna or other desired fish)

Directions:

Combine crumbs and seasonings. Beat egg, combine with milk and pour over the crumbs and allow to stand until liquid is absorbed, then beat to a smooth pulp. Combine with remaining ingredients and pack into a well-greased loaf pan. Set in a shallow pan of hot water and bake in a 350-degree F. oven about 45 minutes, or until done.

Makes 8 servings
