Kedgeree

Ingredients:

2 cups cooked rice
2 cups flaked cooked codfish
1 1/2 cups cream or evaporated milk
3 tablespoons minced parsley
salt and pepper to taste
4 hard-cooked eggs, chopped

Directions:

Cook rice in boiling salted water until tender. Combine with fish, cream, parsley and eggs, season and heat in the top of a double boiler or in a covered baking dish in a moderate oven until thoroughly heated, then serve immediately.

Makes 6 servings
