chopped onion
cup red wine
4 tablespoons olive oil, extra virgin
1 can 16 ounces diced tomatoes
3 cans of minced clams with liquid
2 teaspoons oregano
1 tablespoon garlic, crushed
teaspoon black pepper
1 teaspoon crushed red pepper flakes
salt to taste
2 cans 16 ounces tomato sauce
1 small can mushrooms ( no juice )
pinch of sugar


Combine oil, garlic, wine, onion, clams, mushrooms over medium heat. Add rest of ingredients, bring to a soft boil then let simmer, the longer the better. Cook 1 to 1 pounds of linguini noodles. Serve with sauce poured on top of linguini.

Makes 4 to 6 servings
