3 tablespoons flour, mix thoroughly with:
2 heaping tablespoons butter
1 cup milk
1 can lobster
paprika pepper


Make heavy cream sauce with flour, butter, and scalded milk; cook in double boiler. Flake lobster, form into chop. Dip in cracker crumbs, then in beaten egg, again in cracker crumbs. Fry in butter, serve with tartar sauce. 2 cups ground chicken may be used instead of lobster.
