1/4 cup butter or margarine
1 pint oysters
1 pint milk
1 pint light cream
1 teaspoon salt
dash of pepper
dash of red pepper
2 tablespoons dry sherry, if desired


Heat milk and cream in a double broiler. Melt butter or margarine in a shallow, heavy saucepan. Add oysters and liquid and cook and stir until the edges of the oysters curl. add hot milk and cream and seasonings and serve at once.

Makes 4 servings
