Salmon Croquettes #2

Ingredients:

1 cup boned salmon
1 tablespoon butter
1 tablespoon flour
1/2 cup milk
1 teaspoon lemon juice
1/8 teaspoon pepper
1/2 teaspoon salt
paprika
1/2 teaspoon black pepper

Directions:

Make cream sauce with butter, flour, milk, salt, and pepper, cooking until thick. Put salmon into bowl, add sauce and lemon juice; mix well with fork until salmon is well broken. Set aside, when cold, mold into desired shape, roll in bread crumbs. Let dry 1 hour. Fry in deep hot fat. Serve with butter sauce. Ground cooked salmon may be used instead of salmon.
