Seafood Curry

Ingredients:

6 tablespoons butter or margarine
1 cup chopped peeled apple
6 tablespoons flour
2 teaspoons curry powder (less, if desired)
1/4 teaspoon ginger
1/2 teaspoon onion seasoning
1/8 teaspoon garlic seasoning
1 teaspoon salt
1 teaspoon sugar
1 cup chicken or fish stock
2 cups milk
4 cups cooked or canned seafood, cubed (shrimps, crab, lobster)
6 cups cooked rice (2 cups uncooked)
grated fresh coconut, stemmed raisins, chutney, minced hard-cooked egg, chopped cooked bacon, chopped peanuts

Directions:

Melt butter or margarine, add apple and cook and stir until it begins to soften, but not until it is cooked. Blend flour and seasonings and mix with butter and apple. Add stock and milk and cook and stir until the resulting sauce is smooth and thickened. add additional seasonings, if desired. Add seafood. Serve with rice and pass a try on which are arranged small bowls filled with coconut, raisins, chutney and other accessories. Any one of two may be used although chutney is usually included.
