2 cups tuna or lobster meat
2 tablespoons butter
2 medium-sized truffles, diced
3 egg yolks
small glass madeira wine
1/2 pint cream
salt red pepper


Cook truffles, butter, and seasoning, about 5 minutes. Add wine, cook 2 to 3 minutes, add well beaten egg yolks, cream, stir slowly over low fire. Stir in lobster or tuna fish. Serve very hot, add paprika.
