Baked Rice and Cheese
Ingredients:
2 eggs
1 tablespoon melted butter
1 1/2 cups milk
1 teaspoon salt
dash pepper
2 cups cooked rice
1 cup grated American cheese
Directions:
Beat eggs slightly, add butter, milk, salt, pepper, rice and 3/4 cup of cheese and blend. Pour into a greased baking dish and sprinkle the remaining cheese on top. Set in a shallow pan of hot water and bake in a 350-degree oven about 45 minutes, or until set.
Makes 5 to 6 servings
