Black Eyed Peas with Ham

Ingredients:

3 ½ cups black-eyed peas
3 cups chicken stock or low-sodium chicken broth
4 ounces cooked ham, finely chopped
1 small yellow onion, chopped
2 tablespoons balsamic vinegar or red wine vinegar
3 cloves garlic, minced
1 bay leaf
½ teaspoon dried thyme
¼ teaspoon dried red pepper, crushed

Directions:

Place all ingredients in a large sauce pan and bring to a boil over medium high heat. Cover and reduce heat to simmer until peas are tender, making sure to stir occasionally. Total preparation time is about 45 minutes. Remove bay leaf from the sauce pan and discard. Season with salt and pepper to taste and serve warm.
