1/2 cup rice
1 quart boiling water
1 teaspoon salt


Pick over rice carefully, wash thoroughly. Add rice slowly to salted boiling water. Boil 20 minutes or until kernels are soft. Drain in coarse strainer, pour over rice 1 quart cold water. Return rice to double boiler, cover, cook slowly until dry well each grain will be whole. Avoid stirring rice, use fork.
