Chestnut Dressing
Ingredients:
2 pounds chestnuts
1 tablespoon olive oil
1/2 cup melted butter
4 cups bread crumbs 2 days old or 2 cups freshly mashed
potatoes and 2 cups bread crumbs
1/4 teaspoon pepper
onion seasoning
Directions:
Make an opening in each chestnut using a sharp knife. Pour olive oil over chestnuts and bake for 10 minutes in a hot oven. Remove the chestnuts and take off shell and scrape of the skin. Cook in boiling salted water until soft, drain and put through a potato slicer twice. Add the remaining ingredients and blend thoroughly.
