Green Rice Casserole
Ingredients:
1/4 cup butter
1/2 cup finely minced onion
1/4 cup flour
1/8 teaspoon pepper
1 teaspoon salt
2 1/2 cups milk
2 cups grated American cheese
2 cups chopped uncooked spinach
1/4 cup chopped pimiento
3 cups cooked rice (or 1 cup uncooked)
Directions:
Melt butter in a saucepan, add onion and cook and stir until yellow. Add flour and blend. Add pepper and salt and milk and cook and stir until resulting sauce is smooth and thickened. Add 1 1/2 cups of the cheese, remove from the heat and stir until the cheese is melted. Add finely chopped spinach and pimiento and blend. Arrange 1 cup of the rice in the bottom of a 1 1/2 quart casserole. Cover with half the sauce, then repeat, using the last cup of rice on top. Sprinkle with remaining 1/2 cup of cheese and bake in a 350-degree oven for 30 to 35 minutes or until thoroughly heated and lightly browned on top.
