8 ounces spaghetti
2 tablespoons olive oil
1 cup finely chopped onion
1 can 15 ounces tomatoes
1 cup water
1 can 6 ounces tomato paste
1 teaspoon salt
1/8 teaspoon pepper
1/2 to 1 teaspoon garlic seasoning
1/2 teaspoon poultry seasoning
1/2 teaspoon sugar
grated Parmesan cheese


Heat oil in a heavy skillet or saucepan, add onion and cook and stir over moderate heat until transparent. Add tomatoes and water, cover and simmer gently for 1 hour, adding a little water, if necessary. Add tomato paste and seasonings and continue to cook another hour adding a little water from time to time, as necessary. Cook spaghetti in boiling salted water only until tender, but not soft, drain and rinse with hot water. Pile on a chop plate, platter or 4 individual serving dishes, top with sauce and sprinkle generously with cheese.
