Ingredients:

8 ounces macaroni
3 tablespoons butter
2 tablespoons flour
2 cups milk
1/8 teaspoon red pepper
1/2 teaspoon dry mustard
1 teaspoon salt
2 cups grated American cheese (1/2 pound)
1/4 cup buttered crumbs

Directions:

Cook macaroni until just tender, then drain and rinse. Melt butter in a saucepan, add flour and blend. Add milk and cook until the resulting sauce is smooth and thickened. Add seasonings and all but about 1/4 cup of cheese and stir over very low heat until cheese is melted. Combine with macaroni and pour into greased casserole. Top with remaining cheese mixed with an equal amount of crumbs and bake in a 350-degree oven for about 30 minutes, or until heated and lightly browned on top.

Makes 6 servings
