Ingredients:

4 cups pinto beans (or red beans)
1 chopped onion
2 pounds diced smoked sausage
3 teaspoons sugar
salt and  pepper to taste
1 teaspoon Cajun seasoning
1 teaspoon garlic powder
2 cups rice (cooked separately)

Directions:

Wash beans well & cover with 10 cups water. Soak overnight. Drain and cover with 6 cups of fresh water. Add remaining ingredients except rice. Cook over low heat until beans are done (approximately 2 to 3 hours). Serve over cooked rice.
