Chili Con Queso

Ingredients:

2 cup onion (finely chopped)
1 tablespoon margarine
2 medium tomatoes (peeled, seeded, and chopped)
1 can 4 ounce green chili peppers (rinsed, seeded, and chopped)
¼ teaspoon salt
1 ½ cups shredded cheddar cheese
milk
tortilla chips or corn chips

Directions:

In medium skillet cook onion in margarine till tender but not browned. Stir in tomatoes, chili peppers, and salt. Simmer, uncovered, for 10 minutes. Add cheese, a little at a time, stirring till cheese is melted. Stir in a little milk if mixture becomes too thick.

Serve immediately with tortilla chips or corn chips. Can keep warm in fondue pot over low heat.

Makes 1 ¾ cups
