Basic Vegetable Cream Soup

Ingredients:

1/4 cup butter or margarine
2 to 4 tablespoons minced onion
1/4 cup flour
1 quart milk
salt, to taste
1 to 1 1/2 cups finely chopped or pureed cooked or canned vegetable

Directions:

Melt butter or margarine in a saucepan, add onion and cook and stir until yellow and transparent. Add flour and blend. Add half the milk and cook and stir until the resulting sauce is smooth and thickened. Add remaining milk gradually, stirring constantly. Add salt and vegetable or vegetables and heat to serving temperature.

Makes 4 to 6 servings
