Quick French Onion Soup
Ingredients:
6 medium size onions, thinly sliced
3 tablespoons butter or margarine
4 cups boiling water
5 beef bouillon cubes or 4 teaspoons beef bouillon past
salt and pepper to taste
6 slices French bread toasted or 3 small hard dinner rolls
1/2 to 3/4 cup grated parmesan cheese
Directions:
Melt butter in a heavy saucepan, add onions and cook and stir over moderate heat until the onion is lightly browned. Add water and bouillon cubes or 1 quart soup stock, season and simmer gently, covered, for 15 minutes. Season and pour into 6 small earthenware casseroles.
Float bread or half dinner roll on top, sprinkle with cheese and slip under moderate broiler heat until cheese is lightly browned. Or, ladle into warm soup bowls or plates and top with bread which has been sprinkled with cheese and slipped under broiler heat to brown lightly. Serve with additional cheese
