Seafood Bisque

Ingredients:

2 tablespoons butter or margarine
1 tablespoon flour
1 cup water
1/8 teaspoon pepper
1/8 teaspoon celery salt
1/4 teaspoon onion salt
2 cups milk
1 cup finely minced cooked or canned seafood
(shrimps, clams, oysters, lobster, crab, scallops or shredded cooked fish)
Minced parsley

Directions:

Melt butter in a saucepan, add flour and blend. Add water and cook and stir until the resulting sauce is smooth and thickened. Add Seasonings and stir in milk gradually. When mixture is at simmering temperature, add seafood or fish and heat only to serving temperature. Serve with garnish or minced parsley.

Makes 6 servings

Variations:

1 cup fish stock (court bouillon) or chicken broth may be used in place of water in this recipe.
