2 pounds zucchinis
2 pounds potatoes
2 pounds eggplants
1 green pepper
3 sliced onions
2 thinly sliced green onions
2 pounds ripe peeled tomatoes
1 batch diced parsley
salt and pepper to taste


Clean and chop all the vegetables in large pieces. Bake in a deep pan for about 1 1/2 hr (medium oven).

Makes 6 to 8 servings
