2 cups cooked rice, chilled
1 red pepper, cut into strips
24 snow peas, trimmed and cut into thirds
12 stalks asparagus, cut on the slant into 2 pieces
3 carrots, thinly sliced
1/4 pound cauliflower cut into flowerets
2 eggs, beaten
soy sauce to taste
red pepper flakes to taste
oil for stir-frying


Heat oil (just to coat bottom of large skillet) over high heat. Add vegetables and stir-fry quickly just until crisp-tender. Add cooked rice and stir until well combined. With quick stirring motion, add beaten eggs. Remove from heat and add soy sauce and red pepper flakes to taste.

Makes 4 servings
